Coal won’t work by itself. You need to have a flame rolling over the inside of the oven to heat the stone or the pizza crust will be undercooked. Use a couple of coal brickets and then fill the hopper with wood pellets.
For Pizza you want the oven to be about 700 - 800℉. Too cool and you undercook the pizza, too hot and it burns. Pro-tip is to take a piece of dough and cook that first to test before cooking the actual pizza.
No. Either one or the other but not at the same time as the pellet insert takes the place of the gas burner. Gets plenty hot using either one. You also have to take out the heat deflector if you are going to use the gas insert.
